WHAT TO SERVE WITH CRACK CHICKEN KETO

This Low Carb Crack Chicken seriously could not get any easier.  If you’re looking for a “throw and go” recipe, then we’ve got you covered. 

If you have some chicken that is begging to be cooked and you simply just don’t know what to do with it, then this is the perfect recipe for you! 

This Low Carb Crack Chicken does take a few hours to cook, but we’re throwing it in our crockpot which means we’ll basically just be kicking back while our dinner cooks itself.  Don’t you just love recipes like that?

So let’s make our way into the kitchen and get some delicious dinner started!

LOW CARB CRACK CHICKEN

 

This week in Our Low Carb Kitchen we are making some really tasty Low Carb Crack Chicken in our crockpot. 

The best thing about this recipe is that it’s practically hands off and super tasty! I mean this dish has cream cheese, cheddar cheese and bacon, how can you go wrong? 

There is a bit of a twist that we’ve added with this recipe and we think you’ll enjoy it.  We’ve added black beans and corn!  Don’t worry, there isn’t a lot, but if you’re unable to fit them into your macros you can totally skip these items and it will taste just as yummy.

LOW CARB CRACK CHICKEN INGREDIENTS

So there aren’t a ton of ingredients which means less work for you and it also means your wallet will remain happy.  Alright, let’s check out the list:

  • CHICKEN BREAST- We really like to use chicken breast for this recipe.  Mainly because it has a ton of protein and it isn’t as fatty as chicken thighs.  You can obviously use chicken thighs if you prefer, just remember the nutritional information will be different. 
  • CREAM CHEESE- Any brand of cream cheese will do.  We’re using full fat.
  • PEPPERONCINI RINGS- You can use whole peppers or rings for this recipe.  Either will work, but we like the rings.
  • SOUTHWEST RANCH DIP MIX- We thought it would be fun to mix things up and use a different flavored ranch dip mix.  You can absolutely use regular ranch and it will be just as delicious.
  • MILD CHEDDAR CHEESE- We enjoy the taste of mild cheddar cheese in this recipe. If you like sharp cheddar you can use it as well. 
  • BACON- Cause.. duh am I right? 😛 
  • WHOLE KERNEL CORN- Okay, don’t freak out.  We’re not using that much and it adds a really nice pop of sweetness.
  • BLACK BEANS- We enjoy adding some black beans to our crack chicken.  It has a decent amount of fiber and it’s just really tasty.
  • SCALLIONS (GREEN ONION)- This is a really tasty topping. You can omit, but I’d suggest against it.

I just want to reiterate something here: if you’re unable to fit the corn or black beans in your macros, or you’re on a really low carb diet or keto diet then please omit these two ingredients.  However, if you’re following a more moderate carb diet then this recipe is absolutely perfect for you. 

LOW CARB CRACK CHICKEN DIP

LOW CARB CRACK CHICKEN INSTRUCTIONS

Alright guys, you ready for this?   We’re about to make one of the easiest and tastiest dinners.  Let’s go!

  • The first thing we’re going to do is take out our CHICKEN BREAST and add it to our crockpot. 
    • If you totally forgot to take your chicken out of the freezer then that is absolutely fine.  That’s the beauty of this recipe, you can throw your frozen chicken breast into your crockpot and it will cook in the same amount of time.
  • Next dump the entire jar of PEPPERONCINI RINGS over the chicken breast. Yes.. the entire jar.  Trust me when I say that they are not hot at all, especially after they cook for hours. 
  • Now add the CREAM CHEESE and then the packet of SOUTHWEST RANCH DIP MIX
  • Once all the above ingredients have been added to your crockpot (or slow cooker), you’ll set your power level to low and set the time for 6 hours. 

Now for the next 5 hours and 30 minutes go do whatever floats your boat.  Read a book, watch a movie, mow your lawn.. you know, whatever.

Okay, so now that we sat on the couch and binge-watched Outlander let’s finish up our dinner and then go back to the couch 😉 

  • At this point the chicken is fully cooked, so you’ll want to shred it.  We find that using a meat chopper to be the easiest way to shred our chicken but if you do not have one you can just use two forks to pull your chicken apart. Then stir the shredded chicken with the cream cheese and pepperoncini rings. 
  • Next take out and chop 6 slices of BACON and cook until crispy in your sauté pan.
  • As the bacon is cooking you’re going to open a can of BLACK BEANS and a can of WHOLE KERNEL CORN, rinse both and add to the crockpot and stir well.  
    • You’ll want to rinse both because you definitely do not want bean or corn juice in your crack chicken. 
  • Then you’ll shred your MILD CHEDDAR CHEESE and add to the crockpot and stir until melted and fully incorporated. 
  • Now your bacon should be delicious and crispy. Remove it from the pan and place it on a paper towel-lined plate until most of the fat has drained. 
    • Remember to save all that delicious bacon fat that is left over in the pan. That stuff is liquid gold!
  • The final steps are to slice your SCALLIONS and then top your delicious Low Carb Crack Chicken with the chopped bacon and scallions and serve.

We really really love eating this Low Carb Crack Chicken in bell pepper halves but you can choose so many other ways to dish it up.  You can simply eat it out of a bowl, on low carb bread or tortillas, or on top of broccoli.  If you are higher carb you can have it on a really small bed of rice or even over mashed potatoes.  The choices are up to you and totally endless.

LOW CARB CRACK CHICKEN

Winner winner chicken dinner! This Low Carb Crack Chicken is the easiest and tastiest meal any time of the year!

Ingredients

  • 2 Chicken Breasts (1lb 5oz)
  • 8 oz Cream Cheese
  • 16 oz Pepperoncini Rings
  • 1 packet (.5oz) Southwest Ranch Dip Mix
  • 6 oz Mild Cheddar Cheese
  • 6 Bacon Slices
  • 1 cup Whole Kernel Corn
  • 1 cup Black Beans
  • 2 Scallions for topping (optional)

Instructions

  1. Add CHICKEN BREAST, PEPPERONCINI RINGS, CREAM CHEESE, SOUTHWEST RANCH DIP MIX to your crockpot and set crockpot to low for 6 hours.  *
  2. At the 5.5 hour mark the chicken is fully cooked, so you'll want to shred it.  Then stir the shredded chicken with the cream cheese and pepperoncini rings. **
  3. Chop BACON and cook until crispy in a sauté pan.
  4. Open BLACK BEANS and a can of WHOLE KERNEL CORN, rinse both and add to the crockpot and stir well.  ***
  5. Shred your MILD CHEDDAR CHEESE and add to the crockpot and stir until melted and fully incorporated. 
  6. Remove bacon from the pan and place it on a paper towel lined plate until most of the fat has drained. ****
  7. The final steps are to slice your SCALLIONS and then top your delicious Low Carb Crack Chicken with the chopped bacon and scallions and serve.

Notes

*NOTE: If you totally forgot to take your chicken out of the freezer then that is absolutely fine.  That's the beauty of this recipe, you can throw your frozen chicken breast into your crockpot and it will cook in the same amount of time.
