Low Carb Crock Pot White Chicken Chili is such an awesome dump and go meal!

WHITE CHICKEN CHILI

This post is all about making a luscious white chicken chili the whole family will love. 

Not only is this meal scrumptious, but it’s also super easy. 

Just like you, my days can become incredibly hectic and I won’t even think about dinner until it’s too late. 

The beautiful thing about this low carb white chicken chili is that you make it in the crock pot.  All you need to do is dump all the ingredients into a crock pot and a few hours later it’s done! 

This post is all about creating an effortless and mouthwatering meal your whole family will love. 

Low Carb Crock Pot White Chicken Chili

There are a TON of different chili recipes out there, but I think this low carb white chicken chili could be your new favorite.  There are so many different variations of vegetables, beans, proteins, seasonings and base out there. I know because I have another recipe too: Low Carb Ground Turkey And Chorizo Chili

I adore a delicious bowl of chili and there are a lot of awesome low carb chili options out there, but to be honest I was searching for something different.  No matter what I would do, my tomato based chili was still higher in carbs than I wanted.

Then it hit me! Why not make a chili with a cream base?  I bet that would be delicious and who doesn’t love a super creamy sauce? And why not make it even easier and put it in the crock pot? 

So here we are.  Let’s get started on this simple but tasty low carb white chicken chili.

Chicken Chili

I live in southern California, so we don’t really get enough “chili weather”. You know, that “super cozy, curl up on your couch with a big blanket while stuffing your face with chili” kind of weather?  But right now it’s freezing (low of 50°f today hahah) and I’ve been dying for some delicious chili.  I wanted a chili that was rich, luscious and full of flavor and I decided on white chili.

The beautiful thing about this recipe is the ease.  It can even be prepped the night before!  All you have to do is take out the crock pot insert and add all your ingredients, cover with the lid and put in the fridge.  Right before you go to work take it out and turn it on.  Of course only do this if you are comfortable leaving your house with food cooking. I do this all the time and have never had an issue with it.  

I chose to use chicken breasts for this recipe, because I was already adding a ton of fat with the cream base and didn’t think I’d need more. You may use leg meat, thighs, quarters and even ground chicken. Whichever you prefer.

I’d also like to point out that I did not get organic or pasture raised chicken breast. I bought what was on sale and I’m okay with that. 

To my crock pot I added 2 pounds of chicken breast, which ended up being 3 breasts total.  You can add more or less chicken, frozen or fresh, it’s up to you.

Low Carb Vegetables

We all know that beans are not a low carb food and consequently on the naughty list.  But do we really need beans in order to create a yummy chili? I think not. Instead we’ll use some of our favorite low carb vegetables. Like I said earlier there are so many vegetable variations and this holds true even for low carb veggies. Pro tip: when cleaning out your fridge add all those left over veggies into a chili or soup so nothing is wasted.  

You can add any of the following vegetables to your chili:

  • Green Beans
  • Green Bell Peppers
  • Zucchini
  • Squash
  • Celery
  • Mushrooms
  • Jalapeños 
  • Carrots

Just be mindful of the high carb vegetables and adjust accordingly.

I chose bell peppers, onion, diced tomatoes with green chilies, roasted green chilies and corn. 

Go ahead and get all your vegetables prepped. Wash, dice and set to the side.

Chicken Chili Seasoning

Now that we have our veggies diced and our chicken ready to go we’ll move on to our seasoning. This recipe has really basic seasoning and should be adjusted to your taste. Please make sure you wait until your chicken is completely cooked before you take a taste.  I’ve gone with what I believe is a more traditional chili seasoning. 

  • Garlic
  • Salt
  • Black Pepper
  • Cumin
  • Chili Powder
  • Cayenne
  • Smoked Paprika

You can and should use this recipe as a guide and use spices that you really enjoy. I think chipotle peppers would be really good as well as some jalapeños.

Add the raw chicken to your crock pot and sprinkle seasoning on top.

Crock Pot Chicken- Dump and Go

Don’t laugh, but this is literally my favorite part. There’s something about throwing a bunch of ingredients into a pot, slow cooker/crock pot, or instant pot and walking away that I just find so…exhilarating?  Freeing? I don’t know. I just love that I no longer have to worry about it until it’s basically done. 

Now that our chicken is in the crock pot and seasoning all sprinkled on top, we can add almost all the left over ingredients.

First dump all those beautiful peppers and the onion into the crock pot.

Next we’ll add all the canned ingredients.

I used the Casa Mamita tomato and green chilies from Aldi. I’m not sure if it’s available at any other store.

However, I believe it’s pretty comparable to Rotel.  You can use whatever tomatoes and green chilies you have available.

Before you add the can of corn make sure you drain it. You don’t need all that “sugary corn juice”.  You do not need to add corn if you’re worried about the sugars in it.  Just remember that it’s only one can of corn and this chili makes 6- 2 cup servings. Just give yourself some grace.

To be honest I was really sad about the chili to tomato ratio from Casa Mamita, so I just added more chilies. I added just a bit of roasted green chilies that I had in a can. You can omit this if you’re happy with your green chili to tomato ratio. 😛

Time for a bit of real life struggles.  When you gather all your ingredients, please make sure you take your bone broth out of the freezer the night before. Don’t be like me and spend 10 minutes hacking away at a massive bone broth popsicle. This process was such a pain!

That’s it!  Cover and cook on low for 5-8 hours. 

White Chicken Chili

Now that the chicken is cooked, you’ll have to shred it. You can either take your check breast out and shred it with forks or you can use a meat chopper. Of course I opted for my favorite meat chopper. Once chicken is all shredded make sure you taste your chili and add more seasonings if needed. I ended up adding more salt and pepper. 

Afterwards, dump the block of cream cheese into the pot and stir or chop until chili is creamy.  I like to allow all the ingredients to hang out together for another 10-15 minutes and then I’ll serve it all up in a nice big bowl.

LOW CARB WHITE CHICKEN CHILI SLOW COOKER

Low Carb Crock Pot White Chicken Chili

Cook Time: 5 hours 30 minutes
Additional Time: 10 minutes
Total Time: 5 hours 48 minutes

This creamy Low Carb Crock Pot White Chicken Chili is a family favorite. Enjoy as is or add all your favorite chili toppings!

Ingredients

  • 2 lbs chicken breast-raw
  • 2.5 oz red bell pepper
  • 2.5 oz yellow bell pepper
  • 2.5 oz orange bell pepper
  • 2 oz yellow/brown onion
  • 2 tsp garlic powder
  • ¾ tsp of salt- more to taste
  • 1½ tsp black pepper- more to taste
  • 2 tsp cumin
  • 1 tsp chili powder
  • ¼ tsp cayenne
  • ½ tsp smoked paprika
  • 10 oz can diced tomato with green chilies (Rotel)
  • 10 oz can corn-drained
  • 3 oz roasted green chilies
  • 5 cups chicken bone broth
  • 8 oz cream cheese

Instructions

  1. Wash and dice bell peppers and onion then set to the side.
  2. Next add your chicken breast to crock pot and sprinkle with seasonings. Chicken can be frozen, just make sure you cook it a bit longer.
  3. Once all the seasonings have been added to your crock pot, add the remaining ingredients except the cream cheese.
  4. Cook on low for 5-8 hrs. Once chicken is cooked taste the broth. If you need to adjust your seasonings do so now. Shred chicken with meat chopper or remove from crock pot and shred with forks. If you're shredding with forks, make sure you add the chicken back into the crock pot afterwards.
  5. Dump block of cream cheese and stir until incorporated. Allow chili to sit for at least 10 minutes. This allows the chili to thicken.
  6. Serve in a bowl and add your favorite toppings.
