This post is all about Low Carb Beef Meal Prep using a crockpot. 

The purpose of this post is to show you just how easy meal prepping for your low carb and keto lifestyle can be. 

Not sure about you, but I know when I first started eating this way, I was so overwhelmed with the idea of meal prepping.  But guess what? It can be so simple! 

Because we’re using a crockpot to cook our main ingredient, there’s no need to baby sit nor is there really any work that needs to be done. 

In this post I hope to show you how you too can stay on track with your low carb lifestyle with this Low Carb Beef Meal Prep. 

Low Carb Beef Meal Prep-Crockpot

Let’s be honest.  When you’re first starting a low carb or keto diet it is crucial that you meal prep in order to stay on track.  The reason why I firmly believe this is that it’s so easy to run out to your favorite fast food place or fall into your old SAD (standard American diet) ways when you do not have low carb or keto food prepped and available to you in your fridge or freezer.  I cannot count all the times that I have fallen victim to this and it can easily be fixed if I just spend a little bit of time each week prepping some low carb foods. 

I just scored 1.5 lbs of chuck roast that was on sale at my grocery store and my husband and I have been craving a yummy beefy dinner.  So the timing couldn’t be better.  So this week we’re prepping some chuck roast in our crockpot for future meals. 

Crockpot- The Low Carb Meal Prepper’s BFF

I LOVE my crockpot.  I love it so much that I bought another so my first would never be lonely.  Now you may ask, “are crockpots essential?”  to which I’d say no. However, they sure do make your meal prep or batch cooking a million times easier (no exaggeration).  You can use your crockpot for so many different meals, and meats, soups, chili, stew… the list goes on and on.  You can literally add frozen pre-prepped foods to it in the morning and by dinner time it’s ready and you really didn’t even have to do anything. 

One of the many wonderful uses of a crockpot that I love, is I can put a big hunk of frozen meat into it, add some seasonings and other ingredients and use that one protein for multiple meals throughout the week or even for future meals months later.  This is what we’re going to do today. 

Low Carb Beef

The cut we’ll be using today is the chuck roast.  Chuck roast is such a great cut of beef that has lots of fat and is super inexpensive and versatile which makes it perfect for meal prepping.  Because the chuck roast is super tuff it requires a low and slow cooking method.  Now this is when our beloved crockpot comes in.  We’ll be cooking that sucker in our crockpot all day! 

Meal prepping this way is such a breeze. While our chuck roast is cooking away we can prep other items for the week or we can just sit back and relax.  Maybe read that book you’ve been putting off or sit on the couch all day. 

Low Carb Beef Meal Prep-Crockpot

What we’ve decided we wanted this week was something Mexican inspired.  I don’t know if it’s because we live in Southern California or what, but we have some sort of inspired or completely authentic Mexican dish almost every week. I’m sure the simple answer is that Mexican and Latin food is amazing!  

With that being said, the spices we’ll be using are going to help us give our chuck roast a Latin flavor. 

This step is actually less than 5 minutes.  Ya, you read that right. Five minutes!

Alrighty, first grab your crockpot insert.  You can add a liner if you have one, I didn’t have anymore and was sad.  If you’ve never heard of a crockpot liner they are literally the best thing ever! 

I usually buy mine at the grocery store, but you can buy them on  Amazon too.

Add your chuck roast to your crockpot.  As you can see in my pictures, my chuck roast was still frozen which is totally fine.  You’ll then pour enchilada sauce over your chuck roast. Not only is this giving up a bit of liquid we’ll need so our roast doesn’t burn, but it provides a really nice flavor. 

We used La Palma enchilada sauce from a can.  Most local grocery stores carry it, even Target.

The final steps are to add our spices. 

Starting with Black Pepper.

Salt and Garlic Powder.

Onion Powder and Smoked Paprika.

Finally Cumin and Chili Powder.

The very last ingredient is totally optional but adds a tiny bit of heat.  If you do not have or do not like hatch chilies you can add green chilies, jalapeño or even just green bell pepper.

You’ll then cover your crockpot with a lid, set on low for 8-10 hours.  My chuck roast was 1.5 pounds and was a bit frozen and 8 hours on low was perfect.  I would just suggest checking at the 6-8 hour mark and see if you’re able to shred the chuck roast with a fork.  If not, then I’d suggest cooking for at least one more hour.

Meal Prep Options

Feel free to season your chuck roast with any of your favorite seasonings.  Just think of two or three of your favorite low carb beef meals with the same flavor profile (or close to) and try to make all of them using the crockpot chuck roast. 

With this specific recipe you can definitely make a ton of different dishes!  Here are a few of our favorites:

Burritos

Enchiladas

Burrito Bowls

Quesadillas

Nachos

And finally you just have your Chuck Roast with a side of vegetables or a salad.

Low Carb Beef Meal Prep-Crockpot

Super easy meal prep with crockpot chuck roast. Cook a large batch for multiple meals during the week or put in the freezer for future meals.

Ingredients

  • 1.5 lbs Chuck Roast
  • 1/2 cup Enchilada Sauce
  • 1 tsp Black Pepper
  • 3/4 tsp Salt
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Onion Powder
  • 1/2 tsp Smoked Paprika
  • 1 heaping tsp Cumin
  • 1/2 tsp Chili Powder
  • 2 Tbsp Chili Powder

Instructions

To your crockpot add chuck roast, enchilada sauce, seasonings and hatch chilies. Cover crockpot with lid and cook on low for 8-10 hours or until fork tender.
