I’m so excited to bring you this awesome (barely homemade) beef enchilada recipe. This low carb and keto enchilada recipe is so simple to make!
It’s also the PERFECT make ahead meal because it’s freezer friendly!
If you’ve read any of our blog posts then you know we are big fans of Mexican dishes. With that being said, I love creating low carb and keto Mexican inspired dishes and these enchiladas do not disappoint!
This post is all about making Low Carb Beef Enchiladas that are freezer friendly and incredibly easy to make.
Low Carb Beef Enchiladas
There are so many different variations of enchiladas. You can use chicken like our Low Carb & Keto Chicken Enchiladas, ground chicken, shredded or ground beef, shredded or ground pork and even seafood! Or go vegetarian and just use cheese! The possibilities are endless, and that’s what makes this dish so awesome.
Like I said before, we absolutely LOVE Mexican food and I find that I’m always trying to tweak all those amazing recipes and make them low carb or keto. However, one major concern with a traditional enchilada recipe is the tortilla. Not really low carb or keto friendly right? Thank God there are companies out there that have hopped on the keto and low carb train and have blessed us with premade foods that make our low carb life a whole lot easier.
One of my absolute favorite and “Holy Grail” keto foods is the Egg Thins With Cauliflower by Crepini. If you’ve tried them and don’t like them or you can’t seem to find them in a store near you (my Costco sells them and I hear Walmart does as well), you can absolutely use other keto tortillas or you can use deli meat ( check out my chicken enchilada recipe for instructions).
Another thing that I’m constantly trying to figure out is how I can make most of my dinners super EASY. Besides benefiting from some of the store bought options, something that I’ve learned is that it’s really easy to cook your proteins ahead of time.
Allow me to elaborate. Sometimes when I buy a large amount of ground beef (the 6 lbs from Costco is a great example), I’ll cook it all at once. To it I’ll add salt, pepper and garlic and then portion the finished product into one pound packages and freeze them. This way when I’m having a really busy night or I haven’t meal prepped that week I can just use the already made ground beef. All I need to do is defrost it and I can easily make recipes like this or my Easy Low Carb Ground Beef Manicotti in less that 20 minutes!

I really do love being in the kitchen, but sometimes you just don’t wanna, right? If you’re like me, a busy momma (or Dad 🙂 ), then you know exactly what I’m talking about. So instead of falling victim to a fast food run, you can make your delicious shredded beef ahead of time and then make these awesome freezer friendly Low Carb Enchiladas!
Low Carb Beef Enchiladas-Prep
The prep time for this recipe is literally 5 minutes. This recipe uses 6 burrito sized egg wraps that will be cut in half totaling 12 enchiladas. You can leave them whole, but you will have a very difficult time trying to roll them.
Add two spoonfuls of the shredded beef to each wrap and then roll and tuck the egg wrap into itself. Then you’ll place into your pre-sprayed baking dish.
Once all 12 enchiladas have been rolled and placed into your baking dish, top with enchilada sauce and shredded cheese.
Place baking dish in the oven and bake for 15 minutes. Once cheese is bubbly and brown remove and allow to sit for 5-10 minutes.
Want to batch cook and freeze your Low Carb Enchiladas?
So one of my absolute favorite things to do is batch cook my meals and pop them in the freezer to enjoy later. I’ve discovered that I can simply double or triple all my dinners and stock them in the freezer. Genius right?!?! So if you want to do that with this recipe, you totally can! Follow all steps and instead of placing in the oven wrap with plastic wrap and foil and place in your freezer. When you’re planning to cook them just take them out the night before and place in the fridge to defrost and then when you are ready you can just pop them in the oven to cook for about 45 minutes. Just be sure to check on it, because this time depends on how frozen your enchiladas are.

You can top your enchiladas with all the enchilada toppings you love. Here are a few that we really like:
More Cheese..because duh
Lettuce
Tomato
Onion
Cilantro
Sour cream
Squirt of lime
You can also add pickled or fresh jalapenos and some radishes too.

LOW CARB BEEF ENCHILADAS- FREEZER FRIENDLY
Super tasty Low Carb Beef Enchiladas that are perfect for batch cooking and meal prep. And they are freezer friendly!
Ingredients
- 6 crepini egg and cauliflower wraps
- 1 cup enchilada sauce**
- 1 cup shredded cheese
- 2 cups Low Carb Beef Meal Prep-Crockpot**
Instructions
Preheat oven to 425° and measure out enchilada sauce, Low Carb Beef Meal Prep-Crockpot** and shredded cheese.
Next remove 6 burrito sized crepini wraps and cut in half. Add 2 spoonfuls of shredded beef to wrap and roll just like you would a "regular" enchilada. You will repeat this step 12 times. Place enchiladas in a sprayed baking dish.
Pour enchilada sauce over enchiladas and top with cheese. Place in oven and cook for 15 minutes until cheese is melted and bubbly.
Allow enchiladas to sit and rest for 5-10 minutes and then serve with your favorite toppings.
Notes
I used store bought enchilada sauce, but you can use homemade.
Low Carb Beef Meal Prep-Crockpot**
If you want to batch cook and freeze for later, follow all instructions but do not cook. Wrap with plastic wrap and foil and place in freezer. Enchiladas will be good for 3 months.
