No longer will you miss the burrito bowls of the past, nor will you be slaving away in the kitchen all day. In fact, this Low Carb Burrito Bowl can be meal prepped a head of time. Which is why this easy burrito bowl is one of our favorites (18 month old daughter loves it too).

Omg, There are so many different variations of burrito bowls.
Poultry burrito bowls:
You can use grilled, rotisserie, baked, ground and even canned chicken or turkey.
Seafood burrito bowls:
Seafood burrito bowls are super delicious too! Grilled, sautéed, fried, raw, canned and even blanched seafood are all delicious choices.
However, when I want a really filling meal I always go with a beef burrito bowl, and our Easy Low Carb Burrito Bowl does not disappoint. One of the selling points of this burrito bowl (besides tastiness) is that two of the ingredients are prepped ahead of time. This means that when you are ready for a really yummy beef burrito bowl all you’ll have to do is grab all your favorite toppings and everything will be done within 5 minutes.
Our Favorite Burrito Bowl Toppings
Now this is the part of the meal that is completely customizable. Whichever toppings you love that are low carb and keto can be used.
Some of our favorites are:
Onion- all kinds: spring/green, yellow/brown, red, white and sometimes even chives.
Cheese- we love just about every single cheese.
Tomatoes
Bell Peppers/Capsicum- I prefer red, yellow and orange. But my husband likes the green too.

Prepping Burrito Veg
Alright, the first thing we’ll need to do is wash and chop all our veggies. Once washed and dried chop your bell peppers.
Then we’ll dice our red onion, tomato, lettuce and cilantro.
Building Our Low Carb Burrito Bowl
Once all of our vegetables are prepped, we’ll heat up our Low Carb Beef and Lime & Cilantro Cauliflower Rice.
Gather all your burrito bowl ingredients and add to your favorite salad bowl.

Easy Low Carb Burrito Bowl
This Easy Low Carb Burrito Bowl is so yummy and full of tender beef, cilantro lime rice, guacamole and shredded cheese. One of the BEST meal preps ever!
Ingredients
- 2 cups romaine lettuce
- 1 oz diced tomato
- 1 ½ tbsp diced onion
- 1 oz shredded cheddar cheese
- 2 tbsp tri colored bell peppers
- 2 tbsp corn
- 1 tbsp cilantro
- 2 tbsp sour cream
- 1 serving guacamole cup**
- ½ serving Low Carb Beef**
- 1 serving Lime & Cilantro Cauliflower Rice
- Lime
Instructions
Before putting this amazing burrito bowl together make sure you prepare the Lime & Cilantro Cauliflower Rice and the Low Carb Beef .
Dice all veggies and shred cheese.
To your most favorite salad bowl add lettuce, tomato, onion, corn, bell peppers, cilantro, Lime & Cilantro Rice, Low Carb Beef, sour cream, guacamole, squeeze of lime and finally your favorite hot sauce.
Notes
If you do not have or do not like the premade guacamole cups, you can simply use avocado, or make your own guacamole. Any choice would be amazing!
If you're looking to bump up your protein, go for a full serving of the Low Carb Beef!
