Having an easy, quick, low carb and keto recipe in your back pocket can really help when you’re facing a busy day, no longer feeling motivated, or you’re tempted to order takeout.

In this post I will give you super simple instructions so you too can create a really yummy beef taco meat that is low carb and keto.

 You’re just getting home from work, you’re tired, you had a crappy day, and everyone is hungry. You’re really lacking the motivation to get in the kitchen and whip up a meal that the whole family will enjoy.

I’m sure you know what happens next.  Within 10 minutes you break down and get take-out because you’re just too tired to make something up.  I too am guilty of this. And this is why it is so important that we have quick and easy meals for nights just like these. 

In this post I want to show you just how easy it can be to feed your family good, wholesome and healthy meals. 

Within this post you will learn how one easy dish can transform into many!

Easy Low Carb | Keto Beef Taco Meat

 

Honestly, I put it mildly when I say our family adores taco meat made from ground beef. My husband and I both have fond childhood memories of family taco night, with all the yummy toppings and those delicious crunchy taco shells. Although we no longer eat the higher carb toppings (or shells), we still enjoy taco night with each other and our daughter all the time!

There are times in our busy lives when we’re unable to meal prep for the entire week.  When that happens we need a fast and easy meal that we can throw together that everyone enjoys.  I believe that taco meat is one of the easiest and tastiest meals when you’re experiencing a time crunch.

Beefy Taco Meat

Admittedly I can eat taco meat straight out of the pan, but the awesome thing about this truly versatile food is that you can produce multiple meals.  This post is about constructing my recipe, but I wanted to quickly touch on a subject that I feel is quite crucial to staying on track in your low carb life. 

If you have the money, time and the freezer space I would highly suggest that you double or triple every dish you make. This is extremely important if you’re on a budget, you’re just starting the WOE (way of eating), or for the days where you don’t feel like being in the kitchen for too long. 

Every time I’m in the kitchen I double or triple a recipe so that I will have a “pre-made” meal for those really tough or lazy days.

Some may start to feel overwhelmed thinking about “batch cooking”, but it is super easy if you’re already in the kitchen and making the dish.   

My recipe below has two pounds of ground beef. That may seem like a lot, but I’m making a double batch for a future taco night.  

Let’s begin shall we?

First you will prep and chop your onion. To a dry pan add your onion. Next add your ground beef. 

Please choose the ground beef that works for you and your family. Do not feel like you MUST get the grass fed, grass finished, pasture raised beef. Make sure you’re taking your budget and family into consideration first.

Taco Seasoning

In order for us to get that yummy taco taste we’ll need to add a few different seasonings. I’ll admit that sometimes I can be pretty heavy handed when it comes to my spices. But I really think you’ll enjoy it. 

You should have most of these spices in your pantry. If you don’t you can go to your local grocery store. Walmart, or even a Grocery Outlet or Dollar Tree will have these spices too. 

First up: salt.

Depending on what I’m making I have around 4 different salts that I will use.  For this dish we’ll use sea salt (which is readily available anywhere) and black pepper. Then add chili powder and onion powder. Please adjust to your own tastes if you feel that my measurements are too little or too much.

We’ll follow up with garlic, chipotle pepper, garlic powder, cumin and Worcestershire sauce.

Now that the ground beef is fully cooked and browned we’ll add the green chilis and diced tomato. I prefer to buy the roasted green chilies in a can whenever I can find them. They add so much flavor and they’re actually really pretty. If you have the time to roast your own, GO FOR IT!  Anytime that you’re able to make homemade seasonings/meals DO IT! Everything that is homemade is much more pleasurable. 

Err…So What Next?

Now that we’ve made a bunch of taco meat, what do we do now?  Well, honestly there are so many things we can do with it. I was serious when I said you can eat it straight from the pan. However, if you have a family and you need to feed more than one person there are a few simple meals you can put together:

  • Low Carb | Keto Tacos
    • Romaine lettuce boat, crepini egg wraps or cheese taco shells work really well with this.
  • Low Carb | Keto Taco Salad
    • Serve over a bed of lettuce. Add taco meat, shredded cheese ( Mexican Blend is pretty tasty), sour cream, avocado, tomato and cilantro.
  • Low Carb | Keto Burrito & Taco Bake
    • Layer taco beef, low carb/keto refried beans, cheese and low carb/keto tortilla. Top with lettuce, tomato, onion, cilantro, avocado, sour cream and hot sauce. 
  • Low Carb | Keto Taco Lasagna
    • Build lasagna style and make multiple layers of taco beef, Mexican Blend shredded cheese, low carb/keto refried beans, pickled jalapeño, cottage cheese, low carb/keto tortillas. Top with lettuce, tomato, onion, cilantro avocado, sour cream, Mexican Blend cheese, hot sauce and a nice squirt of lime.
  • Low Carb | Keto Taco Pie
    • To your pie dish spray with avocado oil (or whatever spray oil you have on hand), add your low carb tortilla, shredded cheese, sour cream, keto “refried beans”, more cheese and repeat. 

I strongly urge you to make this recipe.  Not just because it’s absolutely delicious, but  because it is a double batch and you’ll be prepared for the next few meals. All you need to do is take half of your meat mixture, place in a freezer friendly bag/container. Now when you want another taco flavored dinner, take it out of your freezer and allow to defrost overnight.

There are a ton of delicious topping you can add to your ground beef taco meat. Below are some of our favorites:

  • Cheese
  • Sour Cream
  • Green Onion (spring onion)
  • Cilantro
  • Pickled Jalapeño 
  • Diced Tomato
  • Hot Sauce
  • Olives
  • Lettuce

KETO GROUND BEEF TACO RECIPES

Easy Low Carb | Keto Beef Taco Meat

Yield: 6 Cups
Prep Time: 5 minutes
Cook Time: 15 minutes 10 seconds
Total Time: 20 minutes 10 seconds

Delicious, quick and easy low carb | keto ground beef taco meat. This recipe is so easy to batch cook, but also really quick and convenient for those busy work night dinners.

Ingredients

  • 2 lbs ground beef
  • ¾ cup diced onion (84 grams)
  • 8 oz roasted green chilis 
  • 1 can (14.5 oz)diced tomatoes
  • ½ tbsp salt
  • 1 tbsp black pepper
  • ½ tsp chili powder
  • ½ tsp onion powder
  • ½ tsp powdered chipotle chili pepper
  • 1 tsp Worcestershire sauce
  • ½ tsp garlic powder
  • 2 tsp cumin

Instructions

  1. Pre-heat skillet on medium heat.
  2. Add diced onion to dry (no cooking fat added) pan and sauté for 2-3 minutes.
  3. Next add ground beef and seasonings.
  4. Break up ground beef and cook until browned.
  5. Once fully cooked, add Worcestershire sauce and Cumin.
  6. Stir to incorporate and add green chilis and diced tomatoes.
  7. Continue to chop with spatula or meat chopper.
  8. Turn heat to low and simmer for 5-8 minutes.
