LOW CARB KID FRIENDLY DINNERS

This quick and easy kid friendly recipe is perfect for a weeknight dinner.

Not only can you feed your family a nutritious meal, but you’ll also have more time together as this recipe literally takes 15 minutes to make. 

 As a wife and mother, I completely understand the need to feed your family delicious and healthy meals. Because of this, I want to share this really tasty (and more importantly) Kid Friendly, Low Carb and Keto Chicken recipe.

This post is all about creating a yummy and fun meal for the ones you love. 

Little Chicken Dippers- Low Carb, Keto & Kid Friendly

 

Creating new and exciting foods for your family can seem like work, unless you really love cooking. I want to show you an easier way you can reinvent normal, every day foods into a fun journey for your little ones. Remember we’re going to keep it simple, easy and fun for you and the whole family. 

Chicken

Any chance you get to make low carb or keto meals that are “finger foods” the higher the chances are that your picky eaters will be excited to eat whatever you put in front of them. When I make foods that are small enough (or cut smaller) for my daughter to hold, she get’s really excited because it’s small like her and it gives her a sense of independence.

Another reason kids love these types of foods are the “dip-ability” (errr probably not a word) factor. Adding a few of their favorite sauces on the side grants them the ability to choose which yummy sauce to dip their tasty little chicken dippers in, and adds to the fun. 

There are really only a couple of choices when deciding which cut to use for these chicken dippers. In this recipe I decided to make my own strips by cutting up a breast. You can use precut chicken tenders for this recipe, but I find that they are usually a little pricey. You could probably use chicken thighs if you prefer a fattier cut of meat, however I have not tested this so I am unsure of the outcome.

KETO CHICKEN

When cutting up chicken breasts to make chicken tenders please be very careful. Make sure you clean and sanitize your work area afterwards so you do not spread any bacteria. 

To create easy chicken tenders you will cut the chicken breast into thin slices, about half an inch to an inch thick. After this step I usually put all my chicken strips into a bowl or on a plate and then I will sanitize my whole area to ensure a clean work station. 

Chicken “Breading”-Low Carb & Keto Friendly

You will need two dishes, both long enough to dredge your chicken strips. In one dish you will add all your dry ingredients and the other will have your wet.

I have chosen more of a traditional Italian type of seasoning for our chicken dippers. You may substitute your family’s favorite if you prefer. We are also using some oat fiber. I find that oat fiber tends to provide a more bread-like texture.

When I’m making anything that requires some sort of breading I always use one hand for wet and the other for dry. The reason for this is less mess and less waste. If you use the same hand to dip the chicken into the egg mixture as you do for the dry mixture then towards the end you’ll have fingers covered in your expensive keto baking ingredients instead of your chicken and no one wants that. 

Time To Cook That Chicken

Go ahead and heat up your favorite cast iron pan or sauce pan. To my cast iron I’ve added bacon fat. I don’t have a reason as to why I specifically chose bacon fat, except that bacon and its drippings are delicious. Once breaded, go ahead and add the chicken to your pan. Your chicken strips will not take long at all to cook. Make sure you’re keeping an eye on it, do not over crowd your pan and cook at a max of 3 min on each side. If you have a instant read meat thermometer I’d suggest you use it. Minimum temperature should be 164°F.

Since we used a cast iron skillet, I set my heat to low. Be careful not to burn your almond flour.

Once you’ve cooked all your little chicken dippers it’s time to eat!

Dipping Options

Obviously we all have our favorites. Below are some of our very favorite dipping sauces:

  • BBQ Sauce- we love AlternaSweets 
  • Rach Dressing- from the bottle or homemade
  • Marinara sauce- We LOVE RAO’S, or homemade
  • Mustard
  • Sugar Free Ketchup
  • Tzatziki Sauce

You can serve up some low carb and keto veggies on the side, top a salad with these little dippers or just eat as is. I really hope you and your family enjoy these Little Chicken Dippers.

KETO KID FRIENDLY CHICKEN RECIPES

Little Chicken Dippers- Low Carb, Keto & Kid Friendly

Yield: 30 Chicken Tenders
Prep Time: 10 minutes
Cook Time: 6 minutes
Total Time: 16 minutes

Little Chicken Dippers your whole family will love. Dip these tasty, kid friendly chicken strips into your favorite dipping sauce and enjoy!

Ingredients

  • 1 lb chicken
  • 2 medium eggs
  • ⅓ cup half & half 
  • ⅓ cup + 4 tbsp super fine almond flour
  • ¼ cup + 1 ½ tbsp oat fiber
  • 1 tsp garlic powder
  • 1 tsp black pepper
  • 1 tsp dried basil
  • 1 tsp dried parsley
  • 1 tsp dried oregano
  • ½ tsp salt
  • 1-2 tbsp bacon fat or other cooking oil

Instructions

If using raw chicken breast, prep by cutting into ½"-1" strips. Mix dry ingredients in one container and wet in another.

Pre-heat your sauté pan and add your cooking fat. Dredge your chicken strips first in your wet mixture and then into your dry. Add your chicken dippers to your pan. You will want to keep a very close eye on your chicken and adjust your heat if necessary. Make sure you do not burn the almond flour. Cook for a maximum of 3 minutes per side. Check temperature with a meat thermometer, you will want to reach 165°F.

Serve with your favorite veggies and dipping sauce!
