 Ready for a super quick Low Carb Alfredo Chicken Casserole that is ready and in your belly in less than an hour?

Seriously, if you’re looking for a delicious dinner that will feed an army and actually fill you up, then you should definitely make this delicious casserole. 

In this post, I’ll show  you how to “throw” a dinner together that takes no time at all and that your entire family will love. I mean, who doesn’t love chicken alfredo right?

If your family is anything like mine, then they love a good hearty pasta dish and this one sure doesn’t disappoint. 

This post is all about making a quick and easy casserole that is perfect for any weeknight meal. 

Low Carb Alfredo Chicken Casserole

 

 

 

This Low Carb Alfredo Chicken Casserole is spaghetti squash tossed with steamed broccoli, creamy alfredo sauce, delicious juicy chicken, and topped with cheese and baked until golden brown. If this doesn’t  scream comfort food to y’all then I’m not sure what would.  Chicken alfredo dishes are super popular no matter what diet you’re on, and this is for a good reason. All that super creamy and cheesy sauce is hard to deny, right?!

Not only is this casserole absolutely delectable, but it’s actually pretty good for you as well.  Each serving is only 288 calories and 8.6 g of carbs! That’s totally unheard of for an alfredo pasta dish!   Besides the awesome macros for this dish, it will totally curb any sort of alfredo chicken pasta cravings you could possibly have, and you won’t have to feel guilty about it later.

Low Carb Alfredo Chicken Casserole Ingredients

 

  • Spaghetti Squash– You will only need one medium sized spaghetti squash. 
  • Shredded/Diced Chicken– There are multiple various you can use. You can purchase rotisserie style chicken or even cook your own prior to starting this recipe.  We have opted for the rotisserie chicken because the work is already done for us and it’s super delicious. 
  • Parmesan Cheese– If you’re on a budget you may want to just use the parmesan cheese that comes in a can, but I highly suggest shredding your own or even buying the pre-shredded parmesan cheese that you can find in the deli section of your grocery store. 
  • Mozzarella Cheese– Here you can purchase the pre-shredded as well. However, I prefer to shred it myself because it melts better.
  • Alfredo Sauce– Follow my recipe for Low Carb Alfredo Sauce. This only takes 10 minutes to make and you will use the entire batch. Easy peasy.
  • Broccoli– For this recipe, we are using one 1lb bag of broccoli. The broccoli we’re using can be steamed in the microwave. If you choose to use fresh broccoli make sure you cook before adding to the casserole and note that the entire cook time for this meal will be extended. 
  • Garlic Powder– For just a bit of yummy garlic taste. 
  • Onion Powder– Adds a bit of the onion flavor without the hassle of sautéing.
  • Chili Flakes– Optional, but adds a nice bit of heat.
  • Salt and Pepper– A must for all savory dishes.

Assembling Our Low Carb Alfredo Chicken Casserole

 

First things first: cook your spaghetti squash.  Here we are using our pressure cooker How To Cook Spaghetti Squash- In The Instant Pot. If you do not have a pressure cooker/instant pot you can roast your spaghetti squash in the oven at 400°F for 35-40 minutes.  

Once the spaghetti squash is in the pressure cooker, start cooking your broccoli. If you are using a steamer bag, just  place in the microwave and follow instructions on the bag.

While our spaghetti squash and broccoli are doing their thing we’ll make our Low Carb Alfredo Sauce. 

At this time our spaghetti squash, broccoli and alfredo sauce should all be done.  Now you will preheat your oven to 450°F.  While the oven is preheating we’ll add all the ingredients together.

To a large mixing bowl add your steamed broccoli. I personally like to use my meat chopper to break the florets up a bit so they are more bite sized, but you can opt to chop with a knife or leave as is.  Next add the spaghetti squash, garlic powder, onion powder, salt , pepper and chili flakes.

Our next step is to add the chopped/diced chicken.  Once our chicken has been added to the bowl, add the Low Carb Alfredo Sauce and half of the parmesan cheese and half of the mozzarella cheese.

You’ll want to mix everything up really well.

Now that our delicious Low Carb Alfredo Chicken is mixed super well, we’ll add everything to a lightly greased 9×13″ baking dish and then top with the remaining parmesan and mozzarella cheese. 

LOW CARB ALFREDO CHICKEN BAKE

You’re almost there! Now just place in the oven for 20 minutes or until nice and golden brown. If after 20 minutes the cheese hasn’t browned, then you can put under the broiler for 5 minutes. Just be careful not to burn it. 

Once cooked, allow the casserole to sit for 5-8 minutes and then dig in! You can top with more cheese or eat as is.

Low Carb Alfredo Chicken Casserole

This Low Carb Alfredo Chicken Casserole is spaghetti squash tossed with steamed broccoli, creamy alfredo sauce, delicious juicy chicken, then topped with cheese and baked until golden brown.

Ingredients

  • 1 Spaghetti Squash (about 1 lb)
  • 1 lb Cooked Chicken
  • 1 lb Broccoli Florets 
  • 1/2 cup Parmesan Cheese (1.7 oz)
  • 5 oz Mozzarella Cheese
  • 1/2 tsp Garlic Powder
  • 1/4 tsp Onion Powder
  • 1/8 tsp Chili Flakes (optional)
  • 1/2 tsp Salt
  • 1 tsp Black Pepper

Instructions

The very first thing you're going to do is prepare your spaghetti squash. Once spaghetti squash is in the pressure cooker, steam your broccoli and make the Low Carb Alfredo Sauce.

Preheat your oven to 450°F.

While oven is preheating add all ingredients and 1/2 of the cheeses to a mixing bowl. Mix well and add to a greased 9x13" baking dish and top with remaining cheeses.

Bake for 20 minutes until golden brown and bubbly.

Allow to rest for 5-8 minutes and then serve.
