A super glamorous cocktail party.  Beautiful people everywhere and caterers walking around with beautiful silver trays. What’s on those trays you ask? Well, it’s your ground turkey Thanksgiving meatballs with your low carb cranberry sauce. However, you’ve decided to thin out the cranberry sauce and turn it into a drizzle. A beautiful ruby colored drizzle all over your deliciously moist meatballs. Add a cute little skewer, (maybe even made of rosemary) and BOOM! All the party guests  love you!

Okay fine, I’m probably the only one that has dreams like that. But seriously, these Thanksgiving Meatballs are so so good. Check out the recipe below and I’ll show how quickly you can whip these up!

These ground Turkey Thanksgiving Meatballs with Low Carb Cranberry Sauce are so delicious. Now you can have Thanksgiving dinner all year round without all the hassle of cooking an entire Turkey!

Ingredients

Turkey Thanksgiving Meatballs

  • 2 lbs. ground turkey
  • 6 oz. or 2 Stalks of celery
  • 2 oz yellow onion
  • 1 tbsp. of butter
  • 2 cloves of garlic
  • 1 oz. pork panko (or grind your own pork rinds)
  • 1/4 cup almond flour
  • 1/2 tsp. ground nutmeg
  • salt and pepper to taste

Low Carb Cranberry Sauce

  • 2 cups of cranberries
  • 1/2 cup Lakanto Monkfruit **If you plan on eating this cranberry sauce cold, make sure you use powdered monkfruit instead of granular.
  • 1/2 cup of water- this varies depending how thick or thin you want your sauce
  • Zest of one small orange

Instructions

  1. Preheat oven to 375°
  2. Preheat large sauté pan on medium heat and add butter
  3. Once butter is melted (30 seconds) add celery and onion. Cook until onions are translucent (around 3 min)
  4. Add garlic and sauté until aromatic.
  5. In a large mixing bowl add your ground turkey, nutmeg, salt, pepper and sautéed vegetables and mix.
  6. Add pork panko, almond flour, and egg. Mix again.
  7. Line a sheet pan with aluminum foil.
  8. Roll mixture into meatballs- you should have 30 medium sized meatballs
  9. Cook meatballs for 20-26 min. I'd suggest to check temp after the 20 minutes and go from there.

For Low Carb Cranberry Sauce

  1. In a small sauce pan set to medium heat, add your cranberries, water, orange zest and sugar.
  2. Simmer for 5 minutes and check consistency. You kind of have to baby sit this. So don't walk away from it for too long.
  3. Once cranberries burst, mash with potato masher and lower heat to simmer.
  4. Once desired consistency is met, turn off heat.
