In this post you’ll learn how to make a really delicious and easy low carb/keto taco pie.  As someone who is on a low carb or keto diet, you probably already have all the ingredients!

You’ll be surprised to find out how incredibly easy it is to put this recipe together. Another bonus is that almost every part of this recipe can be made ahead of time and put together right before putting it in the oven, or you can actually batch cook this taco pie and have some stored in the freezer for future meals. 

Get ready to put this beef taco pie on your rotation because the whole family will go crazy for it!

This post is all about making a super delicious Easy Low Carb & Keto Ground Beef Taco Pie that will have the whole family asking for seconds!

Easy Low Carb & Keto Ground Beef Taco Pie

 

If  you’ve read any of my other posts you’ll know how much my family and I love Mexican inspired dishes. I understand this dish is nowhere near authentic Mexican cuisine, but it has really lovely and bold flavors. I love the deep notes that the cumin gives and that beautiful smoky chipotle chili powder and a tiny bit of heat from the roasted green chilis that is cut with just a squeeze of lime juice.  Ugh, I’m drooling already.

Another convenient and awesome thing about this dish is that the two main ingredients can be cooked ahead of time. I personally will make large batches of the two main ingredients, freeze them, and then take them out when needed. I urge you to do the same. Or if you have the time, you can make enough double or triple taco pies and freeze them for a later date. 

We absolutely love this taco pie. It is so rich and decadent and a real treat. From the delicious ground beef to the creamy refried beans and all that cheesy goodness, it’s a real winner. 

 

Ground Beef

I’ve said this in multiple posts but if you’re new to by blog, then I’ll say it again: When choosing your ground beef pick whatever fits your budget and that you enjoy. For this recipe I used 85/15% grass fed beef. Now to be honest I get a lot of my organic and grass fed foods from our local grocery outlet.  We are incredibly blessed to have an outlet store in our town and they are ALWAYS stocked with organic, pasture raised and grass fed meat, eggs and even hot dogs. If you’re unsure if you have one in your town you may want to look it up. If we didn’t, I guarantee we would be getting the “regular ol’ meats” and that is okay too.

Let’s get back to the ground beef. For our taco pie I followed our Keto Beef Taco Meat post. I wanted to make multiple taco pies and it was just easier to follow a recipe that had all the measurements and ingredients listed out for a larger batch. 

If you want to make multiple pies or just have extra taco meat to feed your freezer go ahead and follow the recipe in the link above.

First we need to preheat our skillet. Once up to temp add your diced onions and ground beef. You do not need to add any cooking fats to your pan.

Turning Ground Beef Into Taco Meat

There are a ton of different seasonings you can add to your ground beef to give it that “taco flavor”. You can swap out the chipotle powder for canned chipotles or swap the chili powder for smoked paprika. You can add more or less of these ingredients as well.  Bell peppers would be a tasty addition too. Unless a recipe calls for a very specific “you MUST get this to make it” ingredient, use what you have on hand. Not only does that save you money, but it also gives you the freedom to be a little creative.

Now that we have our ground beef and onion in the pan, let’s add our seasonings. 

  • Salt- I used Sea Salt, you may use Pink or whatever you have on hand
  • Ground Black Pepper- I use the pre-ground black pepper while cooking, but the fresh cracked when adding seasoning to already cooked foods.
  • Chili Powder
  • Onion Powder
  • Chipotle Chili Powder
  • Granulated Garlic

At this point you can mix all of this together and add your Worcestershire sauce. Then cook the ground beef all the way until it is no longer pink.

Once the ground beef has been browned add the following ingredients:

  • Green Chilis- I used roasted but regular is fine or even jalapeños
  • Diced tomatoes
  • Cumin

LOW CARB GROUND BEEF CASSEROLES

All you need to do now is chop up the tomatoes and green chilis with your meat chopper or spatula, simmer on low for another 5-10 minutes and you’re done. This meat mixture will make about 5 3/4 cups and you will only need 1 1/4 cup for the taco pie. This is where you can decide if you want to bag up the rest of the taco meat and put it in the freezer, or you can use all of it and make about 5 taco pies for a rainy day.

Taco Pie Without Refried Beans?

Nope! We’re also making some refried beans! You can follow my Low Carb & Keto Refried Beans recipe which also makes a large batch so you can make multiple taco pies or store in the freezer for a later day.  This refried bean recipe is so delicious, your whole family will love it. Let’s get started!

We need to wash and prep all of of our veggies, which are:

  • Eggplant
  • Zucchini
  • Onion- No need to wash unless you’re into that sort of thing.

In the next step we will add our chorizo to our pot along with all the vegetables we prepared.

Once in the pot give it a good mix.

The seasonings that I chose are reminiscent of authentic refried bean flavors. You can change the flavor of your beans based off what you have on hand. We used the following:

  • Salt
  • Black Pepper
  • Cumin
  • Chili Powder
  • Chipotle Pepper Powder
  • Garlic Powder

LOW CARB BEAN SUBSTITUTE

Once you’ve added all your spices you’ll mix everything together and sauté for 15 minutes. Once the 15 minutes are up we will turn our heat to low and cover with a lid. We will be cooking this for 45 minutes covered, just make sure you’re stirring it occasionally.

Now that the 45 minutes are up you’ll need to turn off the heat and puree the “beans”. You can puree with an immersion blender, regular blender or a potato masher.  I used an immersion blender because it makes the whole process much easier and there’s less dishes which is always a win in my book.  If you do not have an immersion blender I highly recommend getting one if you can.

 The puree process should take no longer than 2 minutes. After you’ve pureed your beans taste them. Add more seasoning if you want or even some chicken or beef broth if you like a thinner refried bean texture.

Guess what?? You’re done prepping. Yay!

Assembling The Taco Pie

Now we’re ready to assemble our pie! We will be using crepini egg thins as our tortillas.  If you do not have any available to you then you can definitely choose ANY low carb tortillas.

Take out your 9″ pie plate (or baking dish) and spray the bottom with some avocado oil. We use the Chosen Foods Avocado Oil Spray that we buy at our Costco, but even Walmart has it too.

Next add 2 egg wraps. You can add one, but I find that adding the 2 makes a thicker base which helps the structure of this pie.  The first layer of this pie will differ from the others, but just slightly. First layer will be egg thin (or tortilla), cheese, sour cream, beef and then beans and cheese again. The reason why this first layer starts with shredded cheese is that it too will help with the structure of the pie. If we add our egg thins and then sour cream it will make your egg thins soggy. 

Follow along below for the first layer:

  • 2 egg wraps or tortillas
  • Shredded Cheese
  • Sour Cream
  • Taco Meat
  • Refried Beans
  • Cheese

Using an offset spatula really helps when spreading the sour cream, beans and ground beef.

First layer is now complete. For the next layers you will start with sour cream, refried beans, taco meat, cheese and repeat. I was able to make a total of 3 layers which is 4 wraps total. 

Once oven reaches 475°F place on middle rack for 18-23 minutes or when cheese is melted and bubbly. You’ll want to allow the pie time to rest before cutting into it as this will help those layers to become a little more sturdy.

Here is where you can add all the super delicious toppings found on a taco. Go crazy! We really love the following toppings for our Ground Beef Taco Pie:

  • Sour Cream- yes more because it’s delicious
  • Tomato
  • Green Onion or spring onion
  • Cilantro
  • Avocado
  • Guacamole
  • Cheese
  • Hot Sauce
  • Shredded Lettuce
  • Shredded Cabbage
  • Fresh Salsa like pico de gallo 
  • Pickled Jalapeño
  • Squeeze of lime

Ingredients

  • 1 ¾ cup taco beef **See instructions for link
  • 1 ¾ cup refried beans **See instructions for link
  • 4 crepini egg wraps or low carb tortillas
  • 8 ounces shredded cheddar cheese
  • 8 ounces sour cream

Instructions

  1. 1 ¾ cup of my Easy Low Carb | Keto Beef Taco Meat is needed for this recipeLOW CARB DIET REFRIED BEANS
  2. 1¾ cup of my Low Carb & Keto Refried Beans is also needed for this recipeKETO FRIENDLY BEEF TACOS

Both the taco meat and the refried beans can be found in my Meal Prep menu option.

Preheat oven to 475°F

Spray a 9" pie pan or baking dish with avocado spray or cooking spray of choice. Next add 2 egg wraps to the bottom of the dish.

To the egg wraps add a layer of cheese (**see note), then sour cream, refried beans, taco meat and finally another layer of cheese.

You will repeat these steps (**see note) until you have a total of 3 layers.

Once oven has reached temperature, place pie pan on the middle rack and cook until cheese is browned and bubbly.

Allow Taco Pie to rest for 10 minutes before cutting.

Top with favorite toppings!

Notes

**Only the very first layer will start with cheese as this helps the pie structure. Once you add another egg wrap you will layer with sour cream first, then refried beans, ground beef and top with shredded cheese. See above for complete instructions with pictures.
