LOW CARB KIELBASA

Hey there! If you’re looking for a really simple yet flavor packed meal then this Kielbasa with Peppers and Creamy Mustard Cheese Sauce is for you! 

This low carb kielbasa recipe is so self-indulgent that you’ll definitely feel as if you’re being naughty. 

Although, this dish tastes positively sinful, it has minimal ingredients.  Which of course is a win if you’re on a tight budget. 

So if you’ve got an hour to spare and you are in the mood to “treat yourself” then let’s get in the kitchen and get started on this awesome low carb kielbasa recipe. 

KIELBASA WITH PEPPERS AND CREAMY MUSTARD CHEESE SAUCE

 

Howdy everyone!  I hope ya’ll have had a wonderful week.  If not, then I know this recipe will surely lift your spirits.   This week in Our Low Carb Kitchen we are making one of our all time favorite low carb kielbasa recipes:  Kielbasa with Peppers and Creamy Mustard Cheese Sauce!  

You guys, this recipe is insanely easy to make, requires minimal ingredients and is seriously filling.  How about I stop talking about it and we get in the kitchen and make an awesome meal. 

LOW CARB KIELBASA AND SAUERKRAUT

KIELBASA WITH PEPPERS AND CREAMY MUSTARD CHEESE SAUCE (LOW CARB KIELBASA RECIPES) INGREDIENTS 

Alright, this list is pretty small but packs a massive punch in flavor. 

  • KIELBASA– You can choose whichever brand of kielbasa your family enjoys.  For this recipe we are using the Hillshire Farm brand that we purchased from our local Costco.
  • BELL PEPPERS (Capsicum)- We are using orange and red. You can use whichever color you fancy, just know that they’re all better than green 😉 .
  • BROWN ONION– This is just the onion we prefer.  Please use what you have on hand.
  • AVOCADO OIL– If you only have olive oil then use that. 
  • SALT & BLACK PEPPER

 

Mustard Cheese Sauce Ingredients

  • MILD CHEDDAR CHEESE– This can be swapped for sharp cheddar. 
  • CREAM CHEESE– Cream cheese is seriously awesome.  Not only does it help thicken sauces without using any flour, but it just tastes yummy!
  • WHOLE GRAIN DIJON MUSTARD– We really enjoy the little bursts of flavor that the whole grain version of Dijon provides. 
  • HALF & HALF – Heavy whipping cream can be used instead if you are worried about carbs. However, remember the nutritional information will change drastically. 
  • UNSALTED BUTTER– Definitely use unsalted here. 
  • GARLIC POWDER
  • RED PEPPER FLAKES

As I’ve said many many times, make this recipe your own.  Adjust the amount of mustard or red pepper flakes to your liking and then let me know how it turned out. 

LOW CARB KIELBASA CASSEROLE

KIELBASA WITH PEPPERS AND CREAMY MUSTARD CHEESE SAUCE (LOW CARB KIELBASA RECIPES) INSTRUCTIONS

So in all honesty this recipe isn’t one that you can just whip up on a busy night, unless of course you’ve prepped some of the ingredients beforehand.  Although this recipe may be a bit time consuming it’s totally worth building up those flavors so that you have a delicious meal.  

Getting this meal together will take a bit of multitasking, but I know you’ve got this so don’t be nervous.

PEPPERS AND ONIONS
  • You’ll need a sauté pan.  We’ve found that a 12 inch works best for this.  
  • First things first you’ll thinly slice your BELL PEPPERS and ONIONS. Probably about 1/8th to a quarter of an inch. 
  • Set your pan to medium heat and once your pan is hot add your AVOCADO OIL.  As soon as the oil shimmers you’ll drop in the bell peppers and onions.
  • At this time you will add a hearty pinch of SALT and PEPPER. Stir and cover pan with lid. 
    • You will continue to check on the veggies and stir for at least 50 minutes.  If your mixture seems like it’s dry you can add water and stir.  We had to add a total of 1/2 a cup of water throughout this cooking process. 
  • At the 50 minute mark you’ll then sear your KIELBASA.  Cut your pound of sausage into fourths and move your onion and pepper mixture to one side of your sauté pan. Then place keilbasa pieces into the same pan. Set heat to medium high and sear each side until caramelized. 
    • We decided to cut our kielbasa so that it was long and kind of like a split hotdog.  However, you can have a shorter piece of sausage by not cutting it so long. 
CHEESY MUSTARD SAUCE 
  • For our cheesy mustard sauce we’ll need a small sauce pan.  To our pan we’ll add the HALF & HALF, CREAM CHEESE and BUTTER, MUSTARD, GARLIC POWDER and RED PEPPER FLAKES.  Set heat to medium low. 
    • Keep an eye on your sauce as you do not want it to scorch your milk. 
  • While your cream is getting warm you’ll shred your cheese. Once heated through, taste and add more mustard or chili flakes. 
  • Now that the cream is hot and the desired mustardy flavor has been achieved, you’ll turn off the heat and add half of your MILD CHEDDAR CHEESE and stir until melted. Once melted add the other half and stir until melted. Set to the side. 

LOW CARB KIELBASA AND CABBAGE

Now the way you choose to eat this dish is totally up to you.  You can serve it in a low carb hot dog bun or simply in a bowl.  But however you choose to eat you you must top it with the following:

  • Dill Pickles
  • Tomatoes

Our favorite is to use a low carb hot dog bun.  We add our kielbasa, our caramelized onions and bell peppers, then drizzle with mustard cheese sauce and then top that with sliced or diced dill pickles and tomatoes.  We feel the acidity from both the dill and tomatoes really take this decadent dish to a whole new level.

LOW CARB KIELBASA AND CABBAGE

KIELBASA WITH PEPPERS AND CREAMY MUSTARD CHEESE SAUCE

Cook Time: 55 minutes
Total Time: 1 hour

Ingredients

Kielbasa and Peppers

  • 1 lb Kielbasa
  • 2 Bell Peppers (any color)
  • 8 oz Brown Onion
  • Salt
  • Pepper
  • 2 tbsp Avocado Oil (or oil of choice)

Creamy Mustard Cheese Sauce

  • 4 oz Shredded Mild Cheddar Cheese
  • 2 oz Cream Cheese
  • 3 tbsp Whole Grain Mustard
  • 1/2 cup Half & Half
  • 2 tbsp Unsalted Butter
  • 1/8 tsp Red Pepper Flakes
  • 1/8 tsp Garlic Powder

Toppings

  • Dill Pickles (optional but worth it)
  • Tomatoes (optional but worth it)

Instructions

  1. Thinly slice BELL PEPPERS and ONIONS. About 1/8th to a 1/4 of an inch. 
  2. Set your pan to medium heat and once your pan is hot add your AVOCADO OIL.  As soon as the oil shimmers you’ll drop in the bell peppers and onions.*
  3. Add a hearty pinch of SALT and PEPPER. Stir and cover pan with lid. 
  4. You will continue to check on the veggies and stir for at least 50 minutes.  If your mixture seems like it’s dry you can add water and stir. **
  5. After about 50 minutes your peppers and onions will be beautifully caramelized and that's when you’ll sear your KIELBASA
  6. Cut your pound of sausage into fourths and move your onion and pepper mixture to one side of your sauté pan. Then place kielbasa pieces into the same pan. Set heat to medium high and sear each side until caramelized. 

At about 45 minutes you'll want to start on your cheese sauce.

  1. To our small sauce pan we’ll add the HALF & HALFCREAM CHEESE and BUTTER, MUSTARD, GARLIC POWDER and RED PEPPER FLAKES.  Set heat to medium low.  ****
  2. While your cream is getting warm you’ll shred your cheese. Once heated through, taste and add more mustard or chili flakes to your liking.
  3. Once cream is hot, turn off the heat and add half of your MILD CHEDDAR CHEESE and stir until melted. Once melted add the other half and stir until melted. Set to the side. 
      Place Kielbasa in low carb hot dog bun, top with caramelized onions and peppers, drizzle with mustard cheese sauce and then top with diced dill pickles and tomato.
        Enjoy!

        Notes

        *NOTE- We found that a 12inch pan works best for this
