LOW CARB LETTUCE WRAP IDEAS

Hey guys, hope you’re having a fantastic week.  This week Our Low Carb Kitchen is bringing you a bit of a spin on the “old” low carb lettuce wrap. 

I don’t know about you, but when I think of lettuce wraps my brain automatically goes to the normal (yet delicious) deli meat wrap.  

However, I’ve been craving something a bit different.  So I thought, “Why not make those super yummy PF Changs lettuce cups, but low carb?”

So, guess what?  That’s what we’re doing.  Not only are these low carb lettuce wraps absolutely delicious, but they are crazy easy to make too! 

Without further ado, let’s get these tasty wraps together and in our bellies!

At Our Low Carb Kitchen we seriously love a simple and tasty meal and these copy cat PFC cups do NOT disappoint.  If you’re looking for a change in your menu or simply want to try something new, then you should definitely give these a try.

LOW CARB WRAPS INGREDIENTS

I want to preface this by saying that there are some “specialty ingredients” in this recipe, but guess what?  You can totally buy them at Walmart! Yay win! 

  • GROUND CHICKEN- For this recipe we are using just your regular ground chicken.  You can easily swap this out with ground turkey, beef or ground pork.  Just remember if you decide to change your protein for this recipe, then your nutritional information will be different and you will need to make that change in your macros.
  • Avocado Oil- This is purely based off preference.  You can easily swap out the avocado oil for olive oil, coconut oil or even peanut oil.  
  • Coconut Aminos- If you don’t know what coconut aminos are, they are a low carb, soy free replacement for soy sauce.  If you’re okay with regular ol’ soy sauce then simply use that.  There is no need to go out to and spend the money on an ingredient that you may only use for one recipe.  However, if you’re looking to purchase this product you can totally find it at Walmart
  •  Fish Sauce- Our absolute favorite fish sauce is made by Red Boat.  This brand is a bit pricey, so feel free to purchase another.  Again, Walmart to the rescue! 
  • Chili Garlic Sauce-  Our favorite is the Huy Fong Sauce.  If you prefer another brand, feel free to use that instead.  
  • Hoisin Sauce-   There really isn’t a preference for this.  You can literally get whichever brand you like. Be aware that this ingredient is LOADED with sugar.  So try to look for a brand that has the least amount of carbs.
  • Rice Wine Vinegar- Now you can definitely use regular white vinegar, however just know that rice wine vinegar has a milder and sweeter flavor.  So just keep that in mind if you plan on swapping out the rice vinegar for regular distilled.
  • Toasted Sesame Oil-  If you’re unable to find the toasted variety go ahead and use regular sesame oil.  Be careful when adding this oil to your foods as it will completely over power your entire meal.  Please stick to the amount listed in the recipe.
  • Ginger-  You can use powdered ginger for this recipe, however I HIGHLY recommend fresh.
  • Garlic- Again, you can use powdered for this recipe, but I recommend fresh as well. Nothing beats fresh garlic right? 
  • Water Chestnuts- I bought the “pre-chopped” can because I didn’t feel like chopping water chestnuts up. Does that make me lazy? Meh… maybe. 
  • Green Onion-  This is also called spring onion.  
  • Black Pepper & Salt- Because.. obviously. 
  • Butter Lettuce-  Now you can use whichever lettuce you’d like.  Iceberg is a really great option as well since it has a fantastic crunch. 
  • Sriracha-  This is our favorite topping for any Asian inspired dish. 

Remember when you’re creating this recipe or any recipe you can totally switch out ingredients or add more.  Create and experiment with ingredients that you have on hand, can afford, or just simply prefer. 

LOW CARB LETTUCE WRAPS RECIPES

 

LOW CARB LETTUCE WRAP COOKING INSTRUCTIONS

  • The very first step is to prep the green onion, garlic and ginger. 
  • You will dice the GREEN ONION and separate the green “leafy” bit from the whiter stem.
  • Finely dice the GARLIC and set to the side.
  • Remove the thin skin from the GINGER.  The easiest way to do this is with a spoon.  Simply scrape the ginger with a spoon and the thin skin comes right off.  Afterwards thinly slice or even micro plane the ginger and set to the side. 
  • In a small bowl or a small liquid measuring cup add the following ingredients and whisk:
    • Coconut Aminos
    • Hoisin Sauce
    • Rice Wine Vinegar
    • Fish Sauce
    • Chili Sauce
    • Salt 
    • Black Pepper
  • Grab a skillet and add your AVOCADO OIL to the pan and set on medium heat.  
  • Once the oil has been heated through you’ll add the whites of the onion and sauté until tender. This should only take 3 or so minutes. 
  • As soon as the onion is soft you’ll then add the garlic and the ginger.  Once the ginger and garlic is fragrant (about 1 minute) you will add the GROUND CHICKEN, or whatever meat you choose. 
  • Pour the liquid mixture all over the chicken once it is in the pan.
  • Continue to break up and brown the chicken meat.  This really shouldn’t take more that 5-8 minutes.  
  • Now is the time to add the WATER CHESTNUTS.  Do not add any of the liquid that was in the can. 
  • This is when you should taste the chicken mixture.  If you feel that it needs more salt, pepper or even more heat this is when you’ll add it.  
  • Turn off your heat and drizzle that delicious TOASTED SESAME OIL all over the chicken mixture and top with the green tops of the onion. 
  • Serve in your BUTTER LETTUCE or in your crunchy iceberg lettuce.  

We like to top our low carb lettuce wraps with thinly sliced ginger, sriracha and some more coconut aminos.  Feel free to top with toasted sesame seeds or even chopped peanuts!

Ingredients

  • 2 lbs ground chicken
  • 2 tbsp avocado oil
  • 1/4 cup Coconut Aminos
  • 1 tbsp Fish Sauce
  • 1/8 tsp Chili Garlic Sauce
  • 1 tbsp Hoisin Sauce
  • 1 tbsp Rice Wine Vinegar
  • 1 tbsp Toasted Sesame Oil
  • 1 tbsp Ginger
  • 3 Garlic Cloves
  • 1/2 cup (or 100 grams) Diced Water Chestnuts
  • 2 Whole Green Onion
  • 1 tsp Ground Black Pepper (or to taste)
  • 3/4 tsp Salt (or to taste)
  • Butter Lettuce or any lettuce you enjoy
  • Sriracha to taste

Instructions
