This post is all about creating Low Carb Kid Friendly Meals- The Pizza Pocket.

If you’ve been looking for low carb kid friendly meals then search no more.  These Pizza Pockets are ah-mazing! 

In this post I will show you how to make a delicious meal for your little ones that will have them begging for more.

Not only are these pizza pockets super tasty, but they are seriously simply to make.  So simple that even your kids can help you make them!

So let’s get into the kitchen and whip up a delicious meal in just 30 minutes.  Ready?  Let’s go!

 

PIZZA POCKETS • LOW CARB KID FRIENDLY MEALS

LOW CARB KIDS MEALS

This week Our Low Carb Kitchen is super excited to bring you these awesome pizza pockets.  We seriously had such a great time making (and eating) them.  It was also extra fun because our daughter loved helping create this recipe with us.  

The reason why these pizza pockets are such a great low carb kid friendly option is that they are actually fun to eat!  They fit perfectly in your little ones’ hands and can be dipped in whatever sauce they love.  These pizza pockets are filled with low carb marinara sauce, shredded mozzarella cheese and delicious pepperoni.  I mean, who doesn’t love pepperoni and cheese right?  

Have I mentioned that you can make a double or even triple batch of these tasty pockets, freeze them and enjoy them later?  This is perfect for the busy family (aren’t we all?) because your lunch or dinner is already made for you.  You can simply remove them from the freezer the night before and toast, microwave or even toss them in the air fryer when you’re ready to eat.  Isn’t that awesome?!

 

PIZZA POCKETS • LOW CARB KID FRIENDLY MEALS – INGREDIENTS

PIZZA POCKET CRUST-FAT HEAD DOUGH INGREDIENTS

  • MOZZARELLA CHEESE- For this recipe we are using shredded mozzarella cheese.  We did not buy the pre-shredded cheese that comes in a bag from the store, but instead we shredded the cheese ourselves.  My tip here is to use a food processor if you have one, and use the “shredder” attachment.  This makes it so much easier to shred your own cheese and you won’t ingest any of the extra funky ingredients that are added to the shredded cheese that is at your local grocery store. However if you do not care about the extra ingredients and you’re in a rush (or you simply prefer ease over anything else), then please do what works for you and purchase the pre-shredded. 
  • ALMOND FLOUR-  Please use finely sifted almond flour.  This is something that can be found at basically every single grocery store because it is so popular.  But, if you’re unable to find any then you can definitely get yours here.  The price is as awesome as the product.  
  • CREAM CHEESE- I am simply using my store brand cream cheese, but use what you like and/or what works for you.  I also want to point out that I am using full fat cream cheese.  However, you can use a lower fat if that’s what you like. 
  • EGGS- Now the size of your eggs will depend on how many you’ll use.  If you have large eggs you’ll need to use one, but if you have medium eggs then you’ll only want to use two.
  • ITALIAN SEASONING- If you do not have Italian seasoning you can simple use a mixture of dried basil, parsley and oregano.  This ingredient just highlights the fact that we are making a pizza dish.
  • GARLIC POWDER-  This adds a really yummy garlic flavor to the dough.  I do not recommend using fresh garlic with this recipe. 

PIZZA POCKET FILLING

  • MARINARA SAUCE- You can use whichever low carb marinara sauce you like, but we used Rao’s marinara sauce that we bought from Costco.  I have seen the Rao’s brand at local grocery stores and even at Walmart.
  • MOZZARELLA CHEESE- As I have stated above, we shredded our own cheese, but you can definitely buy the pre-shredded if that is easier for you.
  • PEPPERONI SLICES- You can usually find pepperoni slices at your local grocery store in the deli section which is refrigerated.  Or if your super market has a deli counter you can get it there as well.  We used just your average pepperoni slices for this recipe.  
  • ITALIAN SEASONING- We will be using a bit of this seasoning into our marinara sauce just to bump up the flavor a bit more. 
  • GARLIC POWDER- Because this just makes everything better.
  • SALT- Just a little bit will do ya.
  • EGG- This is not used in the filling, but as wash over the pizza pockets right before we put them in the oven.

Remember when you’re creating this recipe or any recipe you can totally switch out ingredients or add more.  Create and experiment with ingredients that you have on hand, can afford or just simply prefer. If your family or your kids prefer only cheese pizzas then only use cheese.  Or you can even swap out the pepperoni for sausage.  Make these pizza pockets your own.  Trust me, you won’t regret it. 

LOW CARB KID MEALS

PIZZA POCKETS • LOW CARB KID FRIENDLY MEALS – INSTRUCTIONS 

  • PREHEAT your oven to 450°F.
  • We’ll first begin making these awesome pizza pockets by adding our SHREDDED MOZZARELLA CHEESE and CREAM CHEESE to a microwave safe mixing bowl.   You will heat this mixture in 30 second increments until both cheeses are melted. 
  • Once the cheese is melted you will add the ITALIAN SEASONING, GARLIC POWDER, ALMOND FLOUR and EGG.  Make sure you scramble your egg prior to adding to the mixture as it will be easier to incorporate this way. You will want to work quickly so the cheese does not cool too much.  Using a fork or a wooden spoon, mix all ingredients together until fully incorporated.  If you’re unable to fully incorporate all ingredients within one minute you can mix with your hand.  This is what we do.  Now place your bowl of dough to the side.
  • In a small bowl add the MARINARA SAUCE, ITALIAN SEASONING, GARLIC POWDER, SALT and mix. Set to the side.
  • Grab another small bowl and crack one EGG and whisk. Set to the side. 
  • Place a sheet a parchment paper (the size of your cookie sheet) down and spray with cooking spray.  Onto that piece of parchment paper you will add your fathead dough.  On top of that you will add another oiled sheet of parchment paper and begin to roll out your dough into a rectangle with a rolling pin.  Once rolled out prick the entire rectangle of dough with a fork. 
    • You do not want your dough to be too thin as this will cause rips or tears while you’re assembling the pockets.  Shoot for about 1/8th of an inch thick.
  • At this point we will cut out a total of 12 squares. To six of the squares we will add our filling.  First place PEPPERONI then add a spoonful of MARINARA SAUCE and finally top with  your MOZZARELLA CHEESE.
  • Once all the filling has been placed on the bottom layer of dough, you will then cover with the remaining six squares of dough.  Be sure to crimp the edges so that none of the filling spills out while baking. 
  • Finally brush all six pizza pockets with the EGG mixture and place onto the middle rack of your oven and bake for 12-15 minutes. 

Be sure to check on your pizza pockets at the 12 minute mark, and remove from the oven if golden brown.

  • Allow the pizza pockets to rest on the cookie sheet for five minutes. Remove from cookie sheet and allow to cool for another five minutes on a cooling rack.  

Now we are ready to serve!  At OLCK (Our Low Carb Kitchen) we really like to serve these awesome Pizza Pockets with an extra side of marinara sauce for dipping. 

LOW CARB KID LUNCHES

TOOLS TO MAKE KID FRIENDLY PIZZA POCKETS

  1. MIXING BOWL- This is used to heat and mix the fathead dough. Here are some of our favorites, mostly because they’re super cute.
  2. TWO SMALL BOWLS- You can easily use whichever bowls you like.  I prefer the small pinch bowls for this task only because I am using a small amount of ingredients. You can get them here.
  3. PARCHMENT PAPER- Parchment paper can be bought at any grocery store. Be sure to pick up your favorite and be sure you are NOT using wax paper. 
  4. BAKING SHEET- Here are our favorites. Really easy to clean and we definitely use them all the time. 
  5. PIZZA WHEEL OR SHARP KNIFE- If you do not have a pizza wheel you can simply use a sharp knife.  There is no need to spend extra money. 
  6. PASTRY BRUSH- Here’s our favorite pasty brush.  It makes it so much easier to brush the egg mixture onto our pizza pockets. 
  7. COOLING RACK- Any cooling rack will do, but we personally like these

These Kid Friendly Pizza Pockets are so good! Cheesy pepperoni goodness all in one travel friendly pocket!

Ingredients

FATHEAD DOUGH INGREDIENTS

  • 1 1/2 cup Mozzarella Cheese (shredded)
  • 2 ounces Cream Cheese
  • 1 cup Almond Flour
  • 2 large Eggs (1 for the egg wash)
  • 1/2 tsp Italian Seasoning
  • 1/2 tsp Garlic Powder 

PIZZA POCKET FILLING

  • 3 ounces Rao's Marinara (or your favorite low carb tomato sauce)
  • 1 ounce Pepperoni (sliced)
  • 3 ounces Mozzarella Cheese (shredded about 1/2-3/4 cup)
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Italian Seasoning

Instructions

PREHEAT your oven to 450°F.

    Notes

    ** You may layer the filling any way you like. However, I found that adding a layer of pepperoni before the marinara sauce helped combat any possibility of sogginess.
