LOW CARB HAMBURGER SOUP RECIPES

In this post I will show you how to create a super luscious and low carb hamburger soup that from start to finish will literally take 30 minutes to create. 

Not only can you get dinner on the table really fast, but your entire family will absolutely love it!

LOW CARB HAMBURGER SOUP WITH CREAM CHEESE

Hey guys, this week in Our Low Carb Kitchen we’re making Low Carb Hamburger Soup.  Y’all let me tell you, this soup is so so delicious!  It is so full of flavor and creamy and seriously just hits the spot.  You know when you’re looking for a soup that will actually fill you up and satisfy you?  No lie, this soup is hands down the best for fulfilling those needs. 

Another great thing about this soup is that you can totally customize it to your needs.  You can add more vegetables to the soup (ahem…clean out that veggie drawer in your fridge 😉), add more spice or whatever you want to add; the world is your oyster.  

Let’s get started shall we?

LOW CARB HAMBURGER SOUP INGREDIENTS

  • GROUND BEEF- We prefer to use the 88/12% ground beef.  We just get this from Costco as it has the best price.  However, get whichever ground beef fits your budget and/or taste.
  • BELL PEPPER-  Every time I’ve made this recipe I have used a different colored bell pepper, so use what you like and what you have.  If you want to know exactly what I used, it was a red bell pepper.
  • ONION-  We are using yellow onion, but again, you can use whichever you prefer or have on hand. 
  • JALAPENO- Alright this is totally based on preference.  If you do not like any spice you can omit this ingredient.  But I feel it adds a really nice heat to the dish.  I do however have to limit the amount of spice I add to my dishes since my 2 year old daughter eats the same food we do.  So, go crazy and add as much as you like or like I said omit it altogether.
  • ROTEL-  If you’re unsure what Rotel is, it is simply a can of diced tomatoes and green chilies. That’s it.  Rotel is the brand name, but you can just buy the store brands and it will be exactly the same.  Here’s one from Walmart
  • CREAM CHEESE-  This is one of the ingredients that will make our soup really creamy. 
  • BLACK BEANS-  You will only need a very small amount of black beans.  If you’re super strict with your macros or are following a keto diet then you may want to omit this ingredient. 
  • CHICKEN BONE BROTH-  If you do not have any you can definitely use water with some chicken bouillon or plain water.  Just remember if you’re only using water then the flavor may be a bit different and you should check your broth and add more salt if needed. 
  • CHEDDAR CHEESE-  I have made this soup with Mexican blend as well as mild cheddar and sharp cheddar.  They are all delicious, so you can choose whichever cheeses you prefer. 
  • HALF AND HALF-  You may use heavy cream if you prefer, but I really enjoy half and half.  Make sure you adjust your macros if using heavy cream as your fat and carb content will differ from mine. 
    • The following list of ingredients are all the spices that give this soup that “cozy flavor”. 
  • GROUND CUMIN
  • CHILI POWDER
  • GARLIC POWDER
  • ONION POWDER
  • SMOKED PAPRIKA
  • SALT
  • GROUND BLACK PEPPER
  • WORCESTERSHIRE SAUCE

Remember as I’ve said before, you can customize this recipe and make it your own.  If you prefer it to be spicy then add more jalapeno.  If you absolutely cannot have the black beans, then please feel free to omit it.  I promise this soup will still be delicious. 

NO CARB HAMBURGER SOUP

LOW CARB HAMBURGER SOUP INSTRUCTIONS

Alright guys, I’m super serious when I say that this meal comes together quickly.  So before you start cooking anything make sure you’ve washed your bell pepper and jalapeno and take out all your ingredients so you can throw this together in the 30 minute time frame that I have provided.

  • First off grab your most beloved soup pot.  Mine is my beautiful BFF the Dutch Oven.  Turn your heat to medium.
  • Add the GROUND BEEF to your hot pot and start to break up your meat.  Immediately add the GROUND CUMIN, GARLIC POWDER, ONION POWDER, SMOKED PAPRIKA, WORCESTERSHIRE SAUCE, SALT and PEPPER
    • NOTE– If you are using a really high fat ground beef wait to add the spices after you drain your meat.
  • While your meat is starting to brown you will dice your BELL PEPPER, ONION and JALAPENO. Then add your chopped veggies to the pot and continue to cook and stir until translucent. This should only take (at the most) 5 minutes.  
  • Change heat to medium low and then add your can of ROTEL (entire contents, juice and all).  Simmer for 3 minutes.
  • Now add the CREAM CHEESE. Stir cream cheese until fully incorporated. This will take roughly 1-3 minutes. 
  • Once the cream cheese is fully incorporated you will add the BLACK BEANS (omit if strict keto), stir and then add the CHICKEN BROTH.
  • Place lid on pot and turn heat to medium-low. You will allow everything to cook for 10 minutes. 
  • Turn off the heat and add the SHREDDED CHEESE and the HALF AND HALF.  Mix until all fully incorporated and cheese is super melty and delicious. LOW CARB BURGER SOUP

The soup will be super hot, but you can definitely serve right away.  You can eat as is, or you can add a few toppings to make this Low Carb Hamburger Soup even more tasty.  We enjoy the following:

  • Shredded Cheese (yes more, why not?)
  • Diced Tomatoes
  • Diced Onion- any kind will do
  • Fresh Parsley 
  • Sour Cream

This Low Carb Hamburger Soup is so creamy and luscious. This will surely be your go to soup when you're craving decadence and ease.

Ingredients

  • 1 lb Ground Beef 
  • 3 oz Bell Pepper - Diced any color
  • 3 oz Yellow Onion
  • 1 Jalapeno 
  • 1/2 cup Black Beans
  • 10 oz Rotel (tomatoes with green chilies)
  • 4 oz Cream Cheese
  • 4 cups Chicken Bone Broth
  • 1 cup Shredded Cheddar Cheese
  • 1 cup Half and Half
  • 1/2 tsp Salt
  • 1 tsp Ground Black Pepper
  • 1 tbsp Worcestershire Sauce
  • 1 tsp Ground Cumin
  • 1 tsp Chili Powder
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1/2 tsp Smoked Paprika

Instructions
